If you are looking for a large amount of buttermilk then you can simply increase the quantity of almond milk and acidic ingredients as per your requirements.
You can totally sub 1 cup almond milk and 1tsp apple cider or white vinegar for 1 cup buttermilk in a baking recipe. Let the almond milk sit for five to ten minutes and it will begin to thicken into buttermilk. You can then add the lemon juice or apple cider vinegar to the dairy substitute you choose and let it stand for at least ten minutes. The process is the same using these ingredients as it would be using dairy milk but the flavor will be different.
Ready to make your own buttermilk with almond milk. But my preference has always been cider vinegar. It then becomes a good substitute for the buttermilk. You can use coconut milk soy milk or almond milk to make non dairy buttermilk perfect as vegetarian or vegan buttermilk.

You can make vegan buttermilk with soy milk almond milk oat milk and even coconut milk. Let sit for five to ten minutes and the almond milk will start to thicken into buttermilk. You will note that the almond milk will start thickening similar to buttermilk and you can then use it in that way. After you have made your buttermilk the rest is easy.
