They must be picked ripe and eaten within a week or two. Watermelon doesn t ripen once it s been harvested. It will just go bad after awhile. Watermelons don t ripen after they ve been plucked from the vine if i remember correctly.
You can always leave it out and then cut some slices long enough before eating that they can chill a while. If you find that your melon wasn t quite ready for prime time you can improve it by letting it soften a bit in the fridge or by brightening its flavor with citrus and perhaps a sweetener. No melons do not ripen once they are cut from the vine. On e person said yes i say no.
A cantaloupe will keep ripening as long as it s kept intact but that stops once you cut into it. If you refrigerate it this fruit can be stored for 3 to 5 days. There are some chinese and thai dishes w unripe for the rind from watermelon. I have purchased a lot of watermelon that isn t fully ripe it is of poor quality for eating i have never seen it improve or ripen more.

If stayed just on the counter it is good for only 1 day. And since watermelon cannot continue growing or ripening after picking or cutting open this option is not great unless you have plenty to harvest or nothing to lose with freezing weather on the way. Some tips will aim you in the right direction but ultimately the only way to be certain a watermelon is ripe is to cut it open and check. Watermelon does not ripen after harvesting but it can get mushy in the refrigerator if it is a little overripe when picked even before you cut into it.
Yet it can get a bit mushy after cutting into it.
