While it s great for salad dressings olive oil isn t actually so great for seasoning cast iron and that s down to the fact that it has a low smoke point. Olive oil will work but will carry a taste for the first few uses. However the problem arises when you start using it to cook your food. There are milk solids and water in butter that will mess you up.
Olive oil can be a popular choice when it comes to seasoning cast iron cookware and that s because it s one of the most well known and widely available oils on the market. It is not because the oil is unhealthy. It is purely because olive oils smoking point is not high enough to chemically react with cast iron to produce the non stick surface that is required to successfully cook with cast iron. Do not use olive oil to season your cast iron pan.
You can generally use whatever oil you prefer as long as the cooking temperature is below the smoke point of the oil. Place the pan upside down on the top rack of the oven and bake for 1 hour. Best to use lard or hydrogenated cooking fat like crisco. I use regular olive oil to season my cast iron pans but you have to be careful with it since too thick a layer of olive oil can result in a sticky surface instead of a hard glossy one.

You can season your pan with olive oil. Olive oils are very healthy and best for cooking purposes only. It burns much easier than other oils like canola or flaxseed oil. This helps ensure the food doesn t stick and it helps build layers of seasoning.
The difference is the oil s smoke point or the temperature at which the oil starts to give off smoke. Soy corn sunflower and flaxseed oil are especially good for seasoning pans. Olive oil is not the best choice to season cast iron. For effectiveness while seasoning your cast iron skillet you ought to use the right oils.
