Parchment paper is safe up to 420 f so if you are roasting vegetables at a temperature above that say 450 f or 500 f you ll need to use foil. Parchment paper preferably unbleached is more versatile than foil and it s readily available in even small grocery stores these days. Foil is made from metal and in addition to the chemical reaction that can happen when used with acidic foods it can also add a tinny or metallic taste to foods. Depending on the use aluminum foil can be a substitute for parchment paper.
Parchment paper foil is basically very thin aluminum. However because the aluminum foil does not have the same non stick properties as parchment paper it is recommended that you coat it with grease if you want the same non stick cooking effects.
