It was juicy and so tender it literally fell apart when the skin was removed.
Piont the vent hole toward the single front leg. The 22 5 inch weber will accommodate two breasts or a whole turkey up to 21 pounds. Then soak some wood chips in a pan with water apple cider vinegar and a shot of whiskey or cognac for 30 minutes. Grill the turkey over medium low heat 300 350 f.
One in front and one behind the centered turkey but not over the coals. After grilling for 1 hour flip over the turkey so that the breast side is facing up. Let cook for 1 hr 45 min. Both the turkey and i were well smoked by the time it was ready to be consumed.
If you plan on making a pan gravy be sure to place a disposable foil tray on the lower grate. In the picture i also added 2 single turkey thighs to the grill. Cover the kettle with the vent hole open full. As the smoker climbs towards 300 f place the turkey on the top grate.

I would recommend using a weber connect smart grilling hub to monitor the internal temperature. Place turkey in the center of the grill over the aluminum pan. The number of breasts that will fit in the grill is dependent on their size. The 18 5 inch kettle can grill one turkey breast or a whole turkey up to 10 5 pounds.
Take one of the foil pans and fill halfway deep with water and place it on the bottom grate of the grill. I smoked our turkey last year for 14 hours in my memphis grill at 180 degrees f. Once all of the charcoal has turned a gray ash color it s ready for cooking. I basted it at least once an hour and used a mixture of ghee and bourbon.
Next put an aluminum drip pan in the middle of the grill and light some charcoal on each side of it before putting the grill grate on.
