Leave to rest for 20 30 minutes.
Then soak some wood chips in a pan with water apple cider vinegar and a shot of whiskey or cognac for 30 minutes. Divide the charcoal briquettes into two piles one on each side. Place the turkey breast side down inside the foil pans and over the vegetables. Pour your hot coals into an old pan.
Use tongs to place the coals between the grill s side protectors and the disposable aluminum roasting pan. To smoke turkey on a weber charcoal grill start by defrosting the turkey and seasoning it. Do it right and you ll be salivating all down your top perhaps a bib is even a good idea. Smoking a turkey on a charcoal grill isn t much more difficult than using your charcoal grill as a smoker in any other application.
First you will need to set up your grill for indirect cooking. Arrange the charcoal in a half circle on one side of the charcoal grate. In my 22 1 2 inch weber kettle there s just enough room to grill a cut up 20 pound turkey. For smoking a turkey on a grill we like to arrange the coals in a circle around the exterior of the grill leaving a space in the center without coals where we can put a pan to catch any juices that drip from the bird.

Open all of the grill vents. Next put an aluminum drip pan in the middle of the grill and light some charcoal on each side of it before putting the grill grate on. Set the turkey and the disposable roasting pan into the grill in the center of the charcoal grate. Meanwhile prepare a charcoal grill or smoker for indirect heat at approximately 275 degrees f.
I thoroughly recommend learning to use a charcoal smoker. Transfer the turkey to the smoker and carefully place on your smoker s cooking grates or racks.
